Ingredients
- 2 cups flour
- 1 1/4 cups sugar
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 2 cups grated carrots
- 1 apple, peeled and grated
- 3 eggs
- 1 cup oil
- 2 tsp. vanilla
- 1/2 cup raisins
- 1/2 cup chopped nuts
- 1/2 cup coconut

Step 1
IOn a bowl mix flour, sugar, baking soda, cinnamon and salt. Stir in carrots, raisins, nuts, coconut and apple. In a small bowl beat eggs, oil and vanilla and stir into flour mixture. Spoon into well grease muffin cups, filling to top. Bake at 350 for 20 minutes.
