Ingredients

  • 36 Jalapeno Peppers - cleaned and cored
  • 2 8 oz. blocks cream cheese, softened
  • 1 lb. breakfast sausage
  • Cajun Seasoning
  • 36 Jalapeno's cored and rinsed
  • 3 lbs. Boudin Sausage
  • Cajun Seasoning
  • Jalapeno Corer

Preparation

Step 1

Remove casing if there is some, otherwise crumble sausage into skillet and add seasonings. Cook until no longer pink. If using Boudin, place into Jalapenos after using corer to remove seeds and membrane. Add Cream cheese to cooked sausage. Place into cored and seeded jalapenos. Place on Jalapeno Rack.

Place rack on cooking sheet to catch drippings. Cook at 275 degrees until tender. At 30 minutes and 45 minutes check peppers for tenderness.
