Ingredients
- Dressing:
- 8 boxes Uncle Ben's original long grain rice mix
- 1/3 c oil
- 4 c whole almonds
- 1 1/2 lb red seedless grapes, sliced
- 1 1/2 lb green seedless grapes, sliced
- 2 c mayonnaise
- 3/4 c honey
- 1/4 c lemon juice
- 1/4 c cidar vinegar
- 1 c parsley, chopped
- 1 c scallions, thinly sliced
- 1 1/2 t salt
- 1 1/2 t pepper

Preparation
Step 1
Cook rice according to directions, except leave out butter and use 2 c water per box. Toss with oil and refrigerate. (Can be made 3 days ahead.) Roast almonds at 325 for 15 min. One hour before serving, toss rice, dressing, parsley, nuts and grapes.
Dressing:Whisk together first 4 ingredients. Add the next 4. Refrigerate.
