Ingredients
- 3-3 1/3 pounds cut up broiler-fryer chicken
- 3/4 tsp garlic salt
- 3 ounces sliced fully cooked ham, chopped
- 1 medium onion, chopped (1/2 cup)
- 1 medium red bell pepper, chopped (1 cup)
- 1 can (14 ounces) chicken broth
- 1 package (8 ounces) yellow rice mix
- 1/3 cup sliced pimiento-stuffed olives

Preparation
Step 1
sprinkle chicken w/garlic salt, cook in 12in skillet over medium-high heat, until brown on all sides
place chicken in 3-4qt slow cooker, top w/ham, onion & bell pepper, add broth
cover & cook on low 5-6 hrs, or until juice from chicken is no longer pink, cut in the middle of chicken to make sure. remove chicken, stir in rice mix & add chicken, cover & cook on high heat 3-60 minutes until rice is tender, add olives & serve
