Ingredients

  • 1 lb ground beef or 1/2 beef and 1/2 pork
  • 1/2 C bread crumbs
  • 1/4 C parmesan cheese
  • 1 t salt
  • 1/2 t pepper
  • 1 t parsley flakes (dried or fresh)
  • 2 eggs

Step 1

Mix all ingredients in a bowl. Wet your hand and take about 3 oz of the mixture and shape into a ball. If the mixture is too dry to form the balls, add a little water. A wet mixture makes it easier to shape each ball. If it is too wet, add more crumbs.
When your tomato sauce is boiling, drop them into the sauce. Stir gently so that you do not break the meat balls.
My mother used to brown them separately in another pan and then add them to the sauce.
Simmer the meat balls in the sauce for one and a half hours.
