Quark with Honeyed Apples and Raisin Bread
LA cow's milk cheese from Central Europe, quark is similar to ricotta but slightly sour, like yogurt. It makes a good snack if stuffed into celery, as well as a perfect dessert alongside berry compote.

Ingredients
- 1 Tbsp. butter
- 1 Granny Smith apple , peeled, cored, and cut into 12 wedges
- 1 Tbsp. honey , plus more for drizzling
- 6 sprigs thyme (optional)
- 4 slices raisin bread
- 1/4 to 1/2 cup quark ( or fromage blanc )

Preparation
Step 1
In a 10-inch sauté pan, melt butter over medium-high heat. Add apple slices, honey, and 2 sprigs thyme (if using). Cook, stirring often, until apples have softened and browned, 6 to 8 minutes. (Take special care not to burn the honey.)
Toast bread, and spread each slice with 1 to 2 Tbsp. quark. Top with cooked apples, divided evenly among the slices; drizzle with more honey and garnish with remaining thyme sprigs.
