- 1 cup diced Granny Smith apple
- 2 tsp lemon juice and
- 1 tsp pumpkin pie spice
- Ginger-Grapefruit:
- 1 small ruby grapefruit, peeled and white pith removed
- 1/4 cup finely diced red onion
- 1 tsp grated ginger
- toasted sliced almonds
- Orange-Cilantro:
- 1 small navel orange, peeled and white pith removed, thinly sliced
- 1 minced jalapeño pepper
- 1 Tbsp chopped cilantro
- Cilantro leaves for garnish
