Ingredients
- 1 cup fresh corn
- 1/2 cup yellow cornmeal
- 1 cup boiling water
- 2 tsp honey
- 1/4 tsp salt
- 2 egg whites
- Vegetable cooking Spray
Preparation
Step 1
Cook corn, covered, in boiling water to cover 8 - 10 minutes or until tender, drain and set aside to cool.
Combine corn and next 4 ingredients in a medium bowl; stir well.
Beat egg whites at high speed of an electric mixer until stiff peaks form. (Do not overbeat) Fold egg whites into corn mixture.
For corncakes, pour 1/4 cup batter onto a hot griddle coated with cooking spray. Cook 3 minutes on each side or until brown.
Yields: 12 3 1/2 inch corncakes: 40 calories, 1.5 protein, 0.3 fat, 8.2 carbs, 0.6 fiber, 59 mg sodium.
