Christmas morning favorite. Normally make 1.5 recipes for Christmas morning.

Can go generous on the cheese.

This can be put together in advance (up to 2 days) and then baked before served.

They also heat well in the microwave left over.

Egg beaters and low fat cheese work well too.

Ingredients

  • Cupcake pan
  • 8 Eggs
  • 1/4 Cup Milk
  • 1 Cup Shredded cheddar cheese
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1 Tablespoon Olive Oil
  • 1/2 Cup Scallions
  • 1/2 Cup Red Bell Pepper
  • 1 Cup Sliced Mushrooms
  • 1 Cup Frozen Southern-Style Potatoes
  • 4 MorningStar Veggies Patties Crumbled

Preparation

Step 1

1. Preheat oven to 350.
2. In a large mixing bowl, combine eggs, milk, cheese, salt, and peeper. Set aside.
3. Heat olive oil in a large skillet over medium heat. Saute scallions, peppers, and mushrooms. Let cool.
4. Add vegetables and sausage to egg mixture and stir well. Distribute evenly among the baking cups. Spray baking cups with bakers joy to ensure they will not stick.
5. Bake for 22 minutes or until eggs are set.
