Ingredients

  • Filling:
  • 1 yellow (or lemon) cake mix (I used sugar free yellow)
  • 20 oz. of diet Seven Up (1 16.9 oz bottle plus an addl 3 oz.)
  • 1 lg. & 1 small can peaches - rinsed, drained & cut up
  • 1 egg slightly beaten
  • 1 tsp. vanilla
  • 2 pkgs. cream cheese - room temperature
  • 8-12 pkgs of Splenda

Preparation

Step 1

Oven temp. 350 degrees

Mix cake mix and Seven Up well. Pour into 9x13 pan that has been sprayed with Pam/Flour.

Cut up peaches and spread them over the cake mix.

Combine 2 pkgs. of cream cheese with slight beaten egg and vanilla.

Carefully spread cream cheese mixture over cake mix so it covers the entire cake surface.

Bake 30-45 mins. at 350 degrees. Serve with Cool Whip. Refrigerate.
