Pan-Fried Crispy Tofu

Preparation
Step 1
Combine corn starch, 2 Tbsp. salt and Chinese five spice and place level on a dinner plate. Slice 1/2 inch-thick slices of tofu from lobe. Cut these slices in half to create uniform bricks.
Put 2 qts. water, 1 Tbsp. salt, and tofu in a saucepan, and place over medium heat. When water reaches boil, reduce heat to low and cook for 3 minutes. Remove tofu from water, gently pat dry, and set aside until cool enough to handle.
Heat oil in a nonstick saute pan over medium heat until it thins and ripples ever so slightly. Dredge tofu in cornstarch mixture and add to frying pan, making sure not to let bricks touch. Reduce heat to medium low. Flip when golden brown. Cook until both sides are golden brown. Remove from pan and place on cookie rack to drain. Serve immediately with steamed rice and green vegetables sauteed in ginger and garlic.
