Ingredients

  • 1 medium head cauliflower, cut into flowerets
  • 8 oz. can sliced mushrooms, drained
  • 1/2 cup diced green bell peppers
  • 1/4 cup butter
  • 1/3 cup all-purpose flour
  • 2 cups milk
  • 1 tsp. salt
  • 6 oz. shredded American or cheddar cheese
  • 3 Tbs. chopped pimento

Preparation

Step 1

Cook cauliflower in boiling water for 10 minutes or until tender. Drain and set aside. Saute mushrooms and green pepper in butter. Add flour, milk and salt. Stir until thickened. In separate bowl combine cheese and pimento. In a 1 1/2 qt. casserole dish layer half of cauliflower, sauce and top with cheese mixture. Repeat layers. Bake at 350º for 15 minutes.
