Ingredients

  • 3 cups cooked brown rice
  • 4 fresh California plums, cut into bit-sized pieces
  • 1/3 cup fresh chives, finely chopped
  • 1/3 cup golden raisins
  • 3 Tbsp. white grape juice
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. cider vinegar
  • 2 Tbsp. honey
  • 1 tsp. fresh ginger, minced
  • 1/2 tsp. ground coriander
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 2 slices bacon, cooked and crumbled
  • Lettuce leaves

Step 1

Combine rice, plums, chives, and raisins in large bowl. Do not mix. Set aside. Combine grape juice, oil, vinegar, honey, ginger, coriander, salt and pepper in small bowl, whisk to blend. Pour dressing over salad and toss. Top with bacon; serve on lettuce leaves.
