Ingredients
- 1 tbsp butter or oil
- 12 ounces ground beef
- 1 small onion, chopped
- 1/2 can of black beans (7 1/2 ounces) (optional)
- 1/2 can chopped tomates in juice (optional)
- 1/2 tsp ground cuman
- 1/2 tsp dried oregano or cilantro
- 3/4 cup grated Jack cheese
- 10 frozen empanada pastry disks, thawed or can be made using packaged refrigerated pie crusts

Preparation
Step 1
1. Cook onion in butter or oil in heavy skillet until softened.
2. Add spices, stirring 1 minute.
3. Add beef and cook, breaking up lumps with fork.
4. Mix in beans, tomatoes if using.
5. Preheat oven.
6. If using empanada disks, place 3 tbsp meat mixture on disk, moisten edges and fold over and crimp with fork. Brush with oil , bake about 10 minutes at 425°F.
7. If using pie dough, roll out to 1/8 inch thick, cut 4 1/2 rounds, then fill as above. Brush with egg instead of oil. Bake about 20 minutes at 400 °F.
