Directions:
1. Whisk eggs in a bowl with salt and pepper and 1 tablespoon cold water.
2. Heat butter in small non-stick frying pan over high heat. (450 degrees)
3. When the butter starts to foam, reduce heat to medium and add the egg mixture all at once. Swirl with a rubber spatula. Cook eggs until almost set. Tilt the pan and lifting the edge of the Omelette occasionally to allow uncooked egg to flow underneath. Using spatula fold the Omelette in half. Flip over onto plate.
Tips:
Variations; Sprinkle the Omelette with shredded cheese, ham, bacon, and vegetables. Make sure vegetables are small for even cooking.
