Ingredients
- CRUST:
- 18 Oz semisweet chocolate
- 5 Egg yolks, large @ room temperature
- 6 Egg whites, cold
- 2 C whipping cream
- 7 Oz chocolate cookie crumbs, oreo abt 21 cookies
- 7 T butter melted
- veggie spray

Preparation
Step 1
CRUST:
Mix crumbs & butter in bowl. Liberally coat 9" springform pan w/ spray. Press crumbs evenly on bottom & up sides of pan. Freeze til ready for use.
MOUSSE:
Melt chocolate in microwave. Set aside to cool slightly. Beat egg whites until soft peaks form & set aside. Whip cream until stiff but not grainy. Whisk egg yolks slowly into cooled melted chocolate. Using a rubber spatula, scrape chocolate mixture into whipped cream. Mix on lowest speed of electric mixer for 30 seconds, fold in egg whites by hand. Spoon mousse into prepared pan & refrigerate at least 6 hours before serving.
