Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 2 1/2 teaspoons baking powder
  • 2 eggs
  • 1 egg yolk
  • 1 tablespoon finely shredded orange peel
  • 3 cups all purpose flour
  • 3/4 cup chopped red candied cherries
  • 3/4 cup chopped green candied cherries
  • 1/2 cup coarsely chopped toasted almonds
  • 1 beaten egg white
  • 2 tablespoons sugar

Preparation

Step 1

Beat butter in a large mixing bowl with an electric mixer on medium speed for 30 seconds. Add the 1 cup sugar and baking powder; beat till combined. Beat in eggs, egg yolk, and orange peel till well combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour and the candied cherries and nuts.
Divide dough in half. Shape each half into a 14" roll. Place 3" apart on a lightly greased cookie sheet. Flatten slightly to 2" width. Combine egg white and 1 teaspoon water. Brush over dough. Sprinkle with the 2 tablespoons sugar.
Bake in a 375 degree oven for 20-25 minutes or till light brown. Cool on cookie sheet 1 hour or till completely cool.
Transfer to a cutting board. Cut each loaf diagonally into 1/2" slices. Lay slices, cut side down, on cookie sheet and bake 10 minutes more till dry and crisp. Remove and cool on wire rack.
