Nothing warms you like hearty chicken pot pie. This one’s loaded with vegetables and has a tender, flaky crust made with Bisquick® mix.

package (16 ounces) frozen mixed vegetables, thawed

cup Original Bisquick® mix

Heat oven to 400ºF. Mix vegetables, chicken and soup in ungreased 2-quart casserole.

Stir remaining ingredients in small bowl with fork until blended. Pour into casserole.

If desired, stir in 1/2 teaspoon dried thyme leaves, dried sage leaves or pepper.

Variation

I LOVE this recipe. Sooo easy and delicious. I use a can of cream of potato instead of cream of chicken to add more veggies and it's great. I know people who used Cream of Mushroom and Cream of Celery too. The possibilities are endless. Sometimes I even add a little shredded cheese. Enjoy. It's the perfect time of year (20 degrees) for this.

If it was possible I wouldve ate this whole thing. I did make some changes though...i used cream of chicken with herbs & 3/4 can of broccoli cheese, added diced onion, put some parmesan cheese in the bisquick and some garlic powder in the soup mixture. I also used a bag of steamer vegetables that contained baby potatoes, baby corn, carrots,red pepper and broccoli. oh one more thing, i used a rotisserie chicken...yummmmm!!!!

Made this for Sunday dinner, very tasty recipe! I did use the Cream of Chicken with herbs soup instead of plain cream of chicken. I also added a few shakes of poultry seasoning. I think next time I make this, I will double the chicken, and add more liquid (chicken stock or milk) to make it more creamy. Will definitely add this one to my arsenal!

I made this for dinner a month or so ago for the first time. My husband hasn't left me alone since......"When are we havin chicken pot pie again?" He loved it! I loved it too! It's easy to make...my kind of recipe! I've made it once since then and I've made it for dinner tonight to surprise him. If he's had a bad day at work then this will make him feel much better. Two thumbs up for this recipe!!

I made this recipe last night because I was soooo craving a totally yummy, creamy, flavorful chicken pot pie...well, this recipe was NOT it. No flavor what so ever and the crust turned out kinda soggy (granted I did use the Healthy Bisquick mix rather than the original but don't know if that really made the difference). Anyway, I was dissapointed. Don't know what happened.

This recipe was a hit for dinner at my house. I modified it by using chicken broth with the soup rather than water and added chopped onions with the vegetables. I also added cheese to the bisquick topping and it was delicious. Thanks for another great idea.
