Ingredients

  • 1 lb ground veal or 1/2 lb ground beef and 1/2 lb ground pork
  • 1/2 C chopped spinach cooked and drained
  • 1/4 C parmesan cheese
  • 1/2 C bread crumbs
  • 1 t garlic powder
  • salt and pepper
  • 2 T carrots chopped fine
  • 1 1/2 C mozzarella cheese

Preparation

Step 1

Saute veal until all of the pink is gone. Place in a mixing bowl, add spinach and other ingredients. Mix well. Place in crepe used for manicotti. Arrange each crepe in a pyrex dish that has been covered with tomato meat sauce. Sprinkle parmesan and mozzarella. Cover with foil and bake at 350 degrees for 30 minutes. Makes 6 cannelloni.
