Ingredients
- 9 Eggs, whisked
- 4 Slices/Bacon
- 1 lb Chicken Breast, cooked and shredded/rotisserie
- 1/2 Medium Onion, chopped
- 1/2 Red Bell Pepper
- Mushrooms, Small handful, chopped
- Broccoli, 1 stalk w/florets, chopped
- Grape tomatoes, quartered
- Coconut Oil
- Pasta sauce, Verde Salsa, or Salsa

Preparation
Step 1
In a frying pan, cook bacon slices until done. Let cool, and break into pieces.
Remove some of the bacon fat from pan, if necessary, leave enough to saute the remaining ingredients.
To the pan, saute onions, until they become soft. Add red bell, mushrooms, and broccoli. Season with celtic sea salt, and cook to preference. Add grape tomatoes, and shredded chicken, toss, check seasoning, and turn heat off.
In a smaller (omelet style) pan, add fat of choice to cook eggs. I go for Coconut oil. Heat pan, add a quarter of the whisked eggs to the pan, let it cook slowly. Push back the edges to allow some of the eggs on top to run to that part of the pan. Continue to cook until the top is cooked and the eggs are firm.
Spread a little pasta sauce or salsa around the top of the egg, then add a portion of the chicken mix on top. Slide the 'pizza' onto a plate, and repeat!
This was super good, and healthy. I was so proud of the way I sent my kids off to school after making this breakfast for them!
