STEAK SAUCE - MUSHROOMS AND MADEIRA

Ingredients
- 3 tbsp butter, divided
- 2 tbsp olive oil
- 12 ounces button mushrooms, thinly sliced
- 1/2 cup minced shallots (about 3)
- 4 garlic cloves, minced
- 1 tbsp chopped fresh thyme
- 1/2 cup Madeira
- 1 1/2 cup beef broth
- 1/2 cup whipping cream

Preparation
Step 1
1. Melt 2 tbsp butter with 1 tbsp oil in heavy large skillet over medium heat.
2. Add mushrooms and sauté until tender.
3. Add 1/4 cup shallots and half of garlic and sauté until shallots are soft, about 3 minutes.
4. Stir in thyme, season with salt and peper, transfer to bowl.
5. When steaks are cooked, add remaining butter and shallots to skillet.
6. Sauté 2 minutes.
7. Add Madeira and boil until reduced by half, about 3 minutes.
8. Add broth and boil until mixture is reduced to 2/3 cup, about 6 minutes.
9. Add cream and boil until sauce thickens slightly, about 2 minutes.
10. Stir in mushroom mixture.
11. Season to taste with salt and pepper.
12. Spoon over steaks and serve.
