Ingredients
- 8 oz penne pasta
- 1 cup frozen petite peas
- 2 tbs butter or margarine
- 1 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup vodka
- 3/4 cup fat free half and half
- 1 tbs thinly sliced fresh basil leaves
- Grated Parmesan

Step 1
Cook pasta according to package directions, adding peas during the last 2 minutes of cooking time, drain.
Meanwhile, in a nonstick skillet melt butter over medium heat. Stir in garlic, salt and pepper; cook 1 min. Add vodka. Bring to a boil; cook until vodka almost completely evaporates, about 2 minutes.
Stir in cream and tomato paste until smooth. Cook, stirring occasionally, until just bubbly, about 3 min. Stir in basil. In serving bowl toss cream mixture, with pasta and peas. Garnish with Parmesan.
