Ingredients
- 1 to 2 tbsp olive oil
- 1 onion, chopped
- 4 garlic cloves, finely chopped
- 1/2 tsp cumin
- 2-3 tsp chili powder
- 1 carrot, sliced
- 1 potato, diced
- 1 can diced tomatoes
- 1 zucchini, diced
- 1/4 small cabbage
- 4 cups vegetable or chicken stock
- 1 ear of corn
- 10 green beans, chopped
- Fresh Cilantro

Preparation
Step 1
1. Brown onion and garlic in olive oil.
2. Add cumin and chili powder. Cook 1 minute.
3. Add rest of ingredients and cook until vegetables are soft.
4. Top with fresh cilantro and tortilla chips.
