Sweet Apple Sausage Au Gratin Swiss 0 Picture

Ingredients

  • 1 package (12 oz) Al Fresco Chicken Sausage with apple,
  • sliced horizontally into ½ inch rounds)
  • 1 package (1 lb) sauerkraut, rinsed and drained
  • (preferably low-sodium)
  • 1 medium onion, peeled and coarsely chopped
  • 1 Granny Smith apple, peeled, cored and coarsely chopped
  • 2 cloves garlic, peeled and minced
  • 1 lb russet potatoes (about 2 medium),
  • peeled and thinly sliced (1/8 inch)
  • 4 tbsp extra virgin olive oil
  • 1/2 ½ tsp caraway seeds
  • 1/4 ¼ tsp crushed red pepper
  • 1/2 ½ cup dry white wine, Riesling preferred
  • 1/2 ½ cup low-sodium chicken broth
  • 4 slices low fat swiss cheese (about 4 oz)
  • Freshly ground pepper

Preparation

Step 1

1. Preheat oven to 400F.
2. Heat 2 tbsp oil in a large, deep sided skillet and sauté onions, apples and garlic until soft
and just starting to color.
3. Add sausages and sauté 2 – 3 minutes more
4. Add sauerkraut, caraway seeds, crushed red pepper, ground pepper and white wine.
Simmer 10 minutes.
5. Rub covered casserole dish (2 qt. or 8.5 x 8.5 inches) with remaining 2 tbsp oil and line
bottom and sides with overlapping potato slices.
6. Fill with sausage sauerkraut mixture, chicken broth , and top with cheese slices.
7. Cover and bake for 30 – 35 minutes minutes or until cheese is bubbling and beginning to
brown and potatoes are tender. Let sit 5 minutes before serving.
