Ingredients
- 1/4 cup butter or olive oil
- 1 lb. smoked sausage(cut into 1/2" chunks)
- 4 large potatoes (peeled and sliced 1/4" thick)
- 1 cup onion chopped
- 1 cup green pepper chopped
- 1 jalapeno (remove seeds) finely chopped
- salt and pepper to taste
- 1 tablespoon parsley
- 1/3 cup cooking sherry

Step 1
In a large skillet melt butter; Add meat, vegetables and seasoning. Cook over medium heat stirring occasionally about 30 minutes. Add sherry and simmer another 30 minutes.
