Ingredients
- 4 boneless skinless chicken breasts
- 2 tsp ground coriander
- 1 tsp grated fresh ginger
- 2 tsp white wine vinegar
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 tsp corn oil
- 4 large spring onions, trimmed
- 1/2 cup mango chutney
- 1/4 cup chicken stock
- 1 tsp minced garlic
- 1/4 cup fresh ginger, julienned
- 1/4 cup sliced almonds, toasted
- small bunch chopped cilantro

Step 1
Slice chicken crosswise into pieces 1/2 inch thick. Toss in a bowl with coriander, ginger, vinegar, salt, pepper, and 2 tsp oil. Marinate at room temp for a minimum of 15 minutes.
Thinly slice onions, separating white and green.
In a small bowl stir together chutney, stock and garlic.
Heat remaining oil in a frying pan over medium heat. Add onion whites and ginger; stir fry 30 seconds. Add chicken and stir fry until thoroughly cooked, about 4-6 minutes. Add onion greens and chutney mix, and cook, stirring, for 2 minutes.
Garnish with almonds and cilantro.
