Ingredients
- Cookie Crust
- 2 sticks butter
- 2 3oz packages cream cheese
- 2 c flour
- Filling
- 4 3oz packages of cream cheese
- 1/2 c sugar
- 1/2 t vanilla
- 2 egg whites

Preparation
Step 1
For Crust:
Cream butter and cream cheese then add the flour 1/2 cup at a time.
Pinch off the dough and roll into a small ball 1 1/4 inches in diameter.
Put each ball into a mini muffin pan and with the thumb, press the dough around the side and bottom lining up evenly. Fill each hole with filling.
For Filling:
Cream softened cream cheese.
Gradually add 1/2c sugar, beating well.
Add 1/2t vanilla and egg whites and beat.
Spoon filling into shell about 3/4 of way up.
Bake at 350 for 18-20 minutes
