Ingredients

  • 1/4 C olive oil
  • 1 medium onion, chopped
  • 1 t garlic or 2 large cloves chopped
  • 1 28 oz can chopped or crushed tomatoes
  • 1 12 oz can tomato paste
  • 1/2 t salt
  • 1/2 t pepper
  • 1 T basil (dry or fresh)
  • 1 T oregano
  • 1 t sugar

Step 1

Saute onions in oil until they become clear. Add garlic and saute for two minutes longer. Add tomatoes and paste. Wash out the cans with a little water and add to the sauce pot. (1/4 can of water for the tomato sauce can and 1/2 can water for the paste can.) Bring to a boil, add spices, stir so that the tomato does not stick to the bottom. If you want a thinner sauce, add more water. For a thicker, darker sauce, simmer for one and a half to two hours, stirring occasionally.
