Ingredients

  • Additional Ingredients:
  • 2 C. dried large lima beans
  • 3 qs. water stock
  • 1 Tsp. salt
  • 1/2 C. diced medium celery
  • 1/2 C. diced medium carrots
  • 1/2 C. diced medium onions
  • 1/2 lb. of bacon diced (bacon should be medium to thick cut)
  • 1 tsp. of chopped garlic
  • 1 tsp. of pepper
  • 1/2 tsp. dried thyme or 1 Tsp. fresh thyme leaves
  • 1 Tbs. Chicken base
  • 1 tsp. chopped fresh parsley
  • 1/2 lb. of diced ham
  • 1 Tbs. butter
  • 1 qt. water or chicken stock

Directions

In a sauce pot, add the first three ingredient together and bring to a boil for 1 hour and set aside for 20 minutes to absorb additional water. In a separate sauce pot render the bacon until slightly crisp. Add the celery, onion, carrots and chopped garlic and sauté until veggies are semi soft. Add all the beans from the other sauce pot along with an additional qt. of water. Add diced ham along with seasonings. Simmer until beans are tender (about 30-40 minutes). Put soup aside and stir in butter at the very end. Serve plain or with a dollop of sour cream.
