Ingredients
- 4 c. frozen peaches, thawed
- 2 tbsp. lemon juice
- 1 c. brandy
- 1 pkg. powdered pectin
- 5 c. sugar

Preparation
Step 1
Drain thawed peaches. Coarsely chop. Combine peaches, lemon juice and brandy in large saucepan. Place on medium heat and simmer 5 minutes. Stir in pectin and cook over high heat until mixture comes to full boil. Add sugar and return to rolling boil. Boil hard 1 minute, stirring constantly. Stir 3 minutes to distribute fruit. Pour in hot sterile jars, leaving 1/4 inch headspace. Process 10 minutes in boiling water bath. Yield 7 half pints.
