Mixed Greens with Goat Cheese & Candied Almonds

Ingredients
- Candied Almonds:
- 1 c. sugar
- 1/4 c. water
- 1 1/2 c. slivered almonds, toasted
- Salad:
- 4 c. apple cider
- 1/4 c. apple cider vinegar
- 2 T. grated onion
- 2 T. dijon mustard
- 1 T. poppy seeds
- 1 C. olive oil
- 1 (5oz.) bags mixed salad greens
- 12 oz. goat cheese, crumbled

Step 1
For almonds: Place foil on work surface. Stir sugar and 1/4 c. water in heavy med. saucepan over low heat until sugar dissolves, brushing down sides of pan with wet pastry brush. Increase heat and boil without stirring until mixture turns deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 9 minutes. Mix in almonds. Immediately pour out on foil, separating almonds with fork. Cool completely (mixture will harden).
For Salad: Boil cider in heavy lg. saucepan, until reduced to 1/2 c., about 23 minutes. Tfr. to med. bowl and chill until cold. Add vinegar, onion, mustard and poppuseeds. Gradually whisk in olive oil. Toss greens, cheese, and almonds.
