Ingredients

  • 1 can tuna
  • 2 tsp garlic, chopped
  • 2/3 cup chopped onion
  • 2/3 cup diced red pepper
  • 1 1/2 cups sliced mushrooms
  • 1 cup diced tomato
  • 1 1/2 cups Healthy Choice spaghetti sauce
  • Salt and pepper to taste
  • 1/2 cup chopped basil or oregano
  • 1/4 cup parmesan cheese
  • 1 lb of penne pasta

Preparation

Step 1

Cook pasta according to package directions. While it is cooking, saute the garlic, onions and peppers until softened, around 3 minutes, using no fat chicken broth . Add fresh mushrooms and stir.

Increase the heat and cook, stirring 3 or 4 times. Add the diced tomatoes and sauce. Cover and bring to a boil. Reduce the heat and simmer gently for 20 minutes. Adjust the seasoning if necessary.

Fold in the tuna, herbs and cheese. Toss the sauce with the pasta and serve.
