Ingredients

  • Sauce:
  • 4 skinless chicken thighs
  • 1-1/2 tsp curry powder
  • 1/4 tsp salt
  • 1-1/2 Tbsp honey
  • 1/2 cup plain nonfat yogurt
  • 1/4 cup nonfat sour cream
  • 3/4 cup grated cucumber, excess liquid squeezed out
  • 2 Tbsp chopped fresh cilantro or parsley
  • 1 tsp ground cumin
  • 1 tsp fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 tsp black pepper

Step 1

To prepare the sauce, in a medium bowl, whisk together the yogurt and sour cream until smooth. Stir in the cucumber, cilantro, cumin, lemon juice, garlic, and pepper until well blended. Cover the bowl with plastic wrap and refrigerate.

Preheat the broiler; line a broiler pan with foil.

Rub chicken pieces evenly with the curry powder and salt. Place on rack in prepared pan. Broil 7" from heat until browned and juices run clear when chicken is pierced, about 10 to 12 min per side. Baste with the honey, and broil for 1 min longer.

Transfer the chicken thighs to a serving platter.
