Ingredients

  • 1 2/3 cups long grain rice
  • 1 (15 ounce) can garbanzo beans
  • 1 (10 3/4 ounce) can condensed chicken broth
  • 8 ounces cubed cooked beef, chicken, or ham (1 1/2 cups)
  • 1 cup water
  • 1 large onion, chopped (1 cup)
  • 1 (3-once can sliced mushrooms
  • 1/4 cup snipped parsley
  • 1/4 teaspoon pepper
  • 6 sliced bacon, crisp cooked, drained, and crumbled
  • 1 cup shredded cheddar cheese (4 ounces)

Preparation

Step 1

In 2 quart casserole combine uncooked rice, undrained garbanzo beans, chicken broth, choice of cubed meat, water, onion, undrained mushrooms, parsley, and pepper.

Cover and bake in 350 degrees oven for 60 minutes or until rice is tender, stirring once. Stir again, then sprinkle with crumbled bacon and shredded cheddar cheese. Bake, uncovered, for 5 to 5 minutes more on until cheese is melted.
