Ingredients
- 3 tablespoons of olive oil
- 1 cup of chopped onions
- 1/2 cup celery
- 2 cloves of garlic
- minced
- 1 can of chicken broth 32 ounces
- 1 can of oc cannellini beans rinsed and drained
- 4 plum tomatoes chopped
- Ditalini Barilla or small pasta
- 1 tablespoon chopped oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 cup fresh grated parmigiano reggiano cheese divided

Preparation
Step 1
Heat oil in stock pot over medium heat
add onion, carrot,celery and garlic saute 4 minutes until tender
add broth and beans, heat to simmer
add tomatoes
Ditalini 2 tablespoons of parsley, oregano, pepper and salt boil 10 to 12 minutes or until pasta is tender
Stir in remaining parsley and 1/2 cup of cheese.
