Ingredients
- 4 C Fresh or Frozen Blueberries
- 1 TBSP Lemon Juice
- 1 - 8 oz. Can Crushed Pineapple with juice
- 1 1/4 C Sugar
- 1/4 C Quick cooking Tapioca
- 1 TBSP Cornstarch
- Zest from one Lemon
- 1/2 tsp. Ground Cinnamon
- 1 TBSP Butter
- DOUBLE PIE CRUST

Step 1
In bowl combine berries, pineapple & juice. Add sugar, tapioca, cornstarch, lemon peel and cinnamon: toss gently. Let stand for 15 minutes. Make pie crust. Line pie plate; add filling: dot with butter. Place remaining pastry crust over filling. Trim crust and seal. BRUSH TOP CRUST WITH MILK AND SPRINKLE SUGAR OVER. Bake 40 minutes at 350 degrees, cover edges loosely with foil and bake 20 to 30 minutes longer or until crust is golden brown. Cool on wire rack.
