Ingredients

  • 3.4 oz. all purpose flour
  • 3.6 oz. whole wheat flour
  • 1/4 c flaxseed meal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 c mashed ripe banana
  • 1/2 c chopped walnuts
  • 3/4 c sugar
  • 1/2 c plain low fat yogurt
  • 1/4 c canola oil
  • Cooking spray

Preparation

Step 1

Preheat oven to 325 degrees F.

Weigh flours and combine with next 4 ingredients in a large bowl, stirring with a whisk. Combine mashed bananas and next 4 ingredients in a small bowl. Add banana mixture to flour mixture, stirring until just moist.

Spoon batter into a 9" x 5" loaf pan coated with cooking spray. bake at 325 degrees F for 1 hour and 15 minutes or until a wooden pick comes out clean. Cook on wire rack.
