Ingredients
- 4 tbsp butter
- 1 tbsp olive oil
- 3 boneless chicken breast halves, skinned and cut into 1-inch pieces
- Salt and pepper
- 1/4 cup dry vermouth
- 1/2 cup whipping cream
- 3/4 pound fettuccine, freshly cooked
- chopped fresh parsley
- grated Parmesan cheese

Step 1
1. Melt 2 tablespoons butter with oil in heavy large skillet over medium-high heat.
2. Season chicken with salt and pepper.
3. Add chicken to skillet and cook until opaque, stirring occasionally, about 8 minutes.
4. Remove chicken from skillet.
5. Melt remaining 2 tablespoons butter in same skillet over medium-high heat.
6. Add vermouth and bring to boil, scraping up any browned bits.
7. Add cream and stir until sauce thickens, about 8 minutes.
8. Add chicken and heat through.
9. Pour over fettuccine.
10. Sprinkle with parsley and Parmesan and serve.
