Ingredients
- 3 lbs. yellow potatoes, peeled, and sliced very thin
- 2 garlic cloves
- 6 T. unsalted butter
- Coarse kosher salt and freshly ground black pepper
- 3 c. heavy cream

Step 1
Preheat oven to 325.
Rinse the sliced potatoes in cold water. Pat dry in a towel. Rub a shallow earthenware dish with the garlic cloves and butter well. Arrange the sliced potatoes in layers in the dish and season with salt and pepper. Dot with the remaining butter and pour the cream over the potatoes. Bake about 1 1/2 hours; it it very important that the temperature be low enough so that the cream does not curdle as it is absorbed slowly into the potatoes.
During the last 10 minutes, turn the heat up to 400, to brown the top. Serve directly from the top.
