Ingredients

  • 6 medium potatoes
  • 2 cups cheddar cheese -- shredded (8 ounces)
  • 1/4 cup melted margarine or butter
  • 1 8 oz. carton sour cream
  • 3 green onions -- chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter or margarine

Preparation

Step 1

Cook potatoes in skins until tender, about 30 minutes cool. Peel and shred on a coarse grater.

Combine cheese and 1/4 cup melted margarine in saucepan; cook over low heat stirring constantly until cheese is almost melted. Remove from heat; blend in sour cream, onion, salt, and pepper. Fold in potatoes, and spoon into a greased 2-quart shallow casserole dish. Dot with 2 tablespoons margarine.

Cover and bake at 300 F about 25 minutes.
