  • 1 lb. penne
  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 1 eggplant, diced
  • Olive oil
  • Salt and pepper
  • 1 tbs. butter
  • 1 small bunch basil and parsley, minced
  • 2 eggs, beaten
  • 2 tbs. grated cheese
  • 3 oz. Scamorza cheese, thinly sliced

Step 1

Cook the pasta. Preheat the oven to 475 degrees. Toss the peppers and eggplant with oil, salt, and pepper. Broil vegetables until soft. Transfer the mixture to a bowl, add the pasta, butter, and herbs and transfer the mixture to an ovenproof dish. Pour beaten eggs over the pasta and add the grated cheese, season then top with the Scarmorza. Bake the mix for 15 minutes.
