Ingredients

  • 3 - tablespoons of vegetable oil
  • 2 – cups Aunt Jemima Self-Rising Yellow Corn Meal Mix
  • 1 to 2 – tablespoons sugar (optional)
  • 11/2 - cups buttermilk
  • 1/2 ½ - teaspoon baking soda
  • 1 – egg, beaten

Preparation

Step 1

Heat oven to 425ᴼF.
Heat vegetable oil in 10-inch iron skillet in oven for 3 minutes; tilt skillet to coat bottom evenly.

Combine dry ingredients. Add buttermilk and egg; mix until blended. Add melted oil; mix well.

Pour into hot skillet; bake 20 to 21 minutes or until wooden pick inserted in center comes out clean.

* As a substitute for buttermilk, add 1 1/2 tablespoons vinegar to a 2 cup measuring cup. Add enough milk to equal 1 1/2 cups.
