- 6 potatoes
- 1 sweet red pepper
- 1/4 ¼ cup olive oil
- 1/4 ¼ tsp. chopped rosemary
- Salt and pepper
- 1/4 ¼ cup water

Preparation
Step 1
Peel the potatoes into ¼ inch slices. Halve the pepper lengthwise, seed, and slice into ¼ inch slices. Toss the potatoes and red peppers, oil, rosemary, salt, and pepper. Transfer mixture to a 9 inch baking dish. Sprinkle with water and cover and bake at 375 degrees for 45 minutes. Uncover and bake for 10 minutes.
