Dinner Rolls-Sweet Potato Rolls

Ingredients
- 2 packages active dry yeast
- 4 tablespoons sugar
- 1/2 cup mashed sweet potatoes or yams (canned, drained may be used)
- 3 tablespoons butter, softened
- 1 teaspoon salt
- 2 eggs
- 3-3 1/2 cups ap flour

Step 1
Combine yeast, 1/2 cup warm water, and 1 tablespoon
in mixing bowl and let stand 5 minutes. Then add remaining sugar and next four ingredients and stir to mix well.
Stir in 3 cups flour, turn out on lightly floured board and knead. 2-3 minutes, adding just enough additional flour to prevent sticking.
Dough will be soft; do not knead too heavily. When smooth and resilient to light pressure, shape into a ball. Place in oiled bowl and turn to coat surface of dough.
Cover and set in warm spot about 1 hour, or until doubled in bulk. Punch down, shape in a ball and allow dough to rest 2 minutes. Pull off pieces of equal size to form balls about 1 1/4" in diameter. Arrange on greased baking sheet, about 2" apart, or, for joined rolls, arrange about 1/4" apart. Allow to rise 1/2 hour, or until doubled in bulk. Bake in preheated 375 oven for 12-15 minutes, or until hollow sounding when tapped on bottom and well browned. Makes 3 1/2 dozen. Can brushed with egg mixed with 1 tablespoon water before baking.
