Ingredients
- 1 # BJ’s frozen sea scallops, defrosted
- 1 cup + 2T flour
- 1 tsp. baking soda
- 1 cup beer or seltzer
- Pinch of cayenne pepper
- Salt and pepper
- 1 egg – beaten
- Oil for frying

Preparation
Step 1
1. Preheat oil to 360.
2. Mix together 2 T flour, salt and pepper in Ziploc bag. In med. bowl mix remaining flour and baking soda. Whisk in egg and beer, beating until thin and smooth.
3. Working quickly, add scallops to bag with flour mixture and shake to coat. Remove from bag and shake off excess flour.
4. Dip scallops in batter a few at a time and immediately place in hot oil. Cook 2 ot 3 minutes until golden.
5. Serve with lemon wedges
