Ingredients

  • In a large pan, dissolve:
  • 1/4 rennet tablet in 2 quarts warm water.
  • mix in:
  • 3 C non-instant milk powder
  • 1/2 C buttermilk
  • Be sure to completely dissolvethe milk. Allow to stand in warm room until set. (5-10 hours)

Step 1

When a firm curd has formed, cut into 1/2 inch squares and set in a pan of hot water. Stir gently at frequent intervals to warm evenly. When curds have hardened to a consistancy you desire, pour through strainer or coander lined with muslin, cheese cloth or coffee filter. Drain and the run cold wate through the cheese until it is cool and well washed. Salt and add cream or whole milk to desired creaminess.
