Choyote Potato Pancakes

Ingredients

• I've had luck with using Chayote for latkes (potato pancakes). Barbo's recipe is the bomb.
• 2 2 2 peeled and seeded Chayotes
• 1/4 1/4 1/4 sliced onion
• 2 2 2 eggs, beaten
• 1/3 1/3 1/3, cup Carbquick (I think it's 1/3, that's the amount I use)
• to have to try the Chayote for hash browns too.
