Hearty Chick Pea Soup

Ingredients
- 2 T olive oil
- 1 rib celery chopped
- 1 med carrot chopped
- 1 med onion, chopped
- 2 cloves garlic minced
- 1 teasp cinnamon
- 1/4 tsp ground tumeric
- 1/4 tsp ground giger
- Pinch of saffron - optional
- 2 cups veggie broth
- 1 can (15 oz) chic peas, rinsed and drained
- 1 can (14 oz) diced or stewed tomatoes
- 2 cups baby spinach leaves

Preparation
Step 1
Saute in oil -- celery, carrot, onion, garlic.
Add seasoning. Saute 1-2 min. more
Add broth, chic peas, tomatoes & their juice. Simmer until veggies tender (25 min)
Stir in spinach - cook until wilted
