Ingredients

  • 1 cup hot water
  • ½ cup butter
  • 1 tbs. sugar
  • ½ tsp. salt
  • 1 cup sifted flour
  • 4 eggs
  • 1 tsp. grated orange peel
  • 1 tsp. grated lemon peel

Step 1

Bring the water, butter, sugar, and salt to a boil. Add the flour all at once. Beat vigorously with a wooden spoon until the mixture leaves the sides of a pan, and forms a smooth ball- about 3 minutes. Remove mixture from heat. Quickly beat in the eggs, one at a time, beating until smooth after each addition. Continue beating until the mixture is smooth and glossy. Add the peel and mix thoroughly, and place the mixture in a pastry bag.

Bake at 450 degrees for 15 minutes, then lower the heat to 350 degrees and bake another 15 – 20 minutes or until golden in color.
