Ingredients
- FILLING:
- 1 1/2 cup sugar
- 4 Tbsp. cornstarch
- 3/4 cup juice from cherries
- 3 cup canned pitted tart red cherries packed in water
- 1 Tbsp. butter
- 1/4 tsp. red food color
- Pastry
- PASTRY:
- 2 cups sifted all-purpose flour
- 1 tsp. salt
- 2/3 cup shortening
- 5-7 Tbsp. cold water

Step 1
FILLING:
Combine 3/4 cup sugar with cornstarch. Stir in cherry juice. Cook over medium heat, stirring occasionally until mixture thickens. Cook 1 minute. Add remaining sugar, cherries, butter, and food coloring. Let stand.
PASTRY:
Sift flour and salt together, cut in shortening until pieces are the size of small peas. (For extra tender pastry, cut in 1/2 shortening until like cornmeal, and 1/2 like peas). Sprinkle 1 Tbsp. water over mixture. Toss with fork. Repeat and roll into ball. Divide in 2.
